Had lunch with my friends Becky and Sharon. Becky's soup was unbelievable! Recipe below! Soup on this blustery, winter day was so wonderful!
Becky's Tex Mex Tortilla Soup
3 lg boneless skinless chicken breasts
2 cups water
2 (14.5 oz) cans of chicken broth
1 (14.5 oz) can diced tomatoes
1/2 cup chopped onions
1/2 cup green peppers
1 cup chopped zucchini
1 sm can kernel corn
2 tsp chili powder
1/2 tsp cumin
1/8 tsp black pepper
Tortilla chips
Shredded Monterey Jack Cheese
Directions:
Cut chicken into 1 inch cubes. Set aside. In large saucepan, combine water, broth, undrained tomatoes, onions, peppers and zucchini. Bring to boil. Add chicken and reduce heat. Cover and simmer for 10 min, then add corn, chili powder, cumin and black pepper. Cover and simmer 10 more min. Place crushed chips into each bowl. Sprinkle the chips with cheese. Ladle soup over the chips and cheese. Serve hot!
My dad came in town to say good-bye before I leave for South Africa. I put him to work as soon as he walked in the door. We were getting things done, running errands; he helped so much! It was great to have another set of hands. Went to dinner at Newks and then ran over to show him Yogurt Mountain! Yogurt in 27 degree weather wasn't smart, but oh it was good!
